As someone who was using the J.A. Henckels International Eversharp Pro 13-Piece Knife Set with Block for all of my cutting purposes, I realized it was time to upgrade - few things, if used, are truly "eversharp" (and certainly not for under $100). I recently purchased the Wusthof 979783 Classic 8-Inch Cook's Knife at a major cooking chain after trying it against the Global G-2 8-Inch 20cm Cook's Knife and the Zwilling J.A. Henckels Twin Pro S 8-inch High Carbon Stainless-Steel Chef's Knife. I really liked how it felt in my hand, but found that cutting with it required me to change my grip substantially to use properly. As someone with no professional cooking aspirations or training, I just figured this came with the territory of learning to use a great knife. I also purchased the Perfect Paring Knife 4" - Shun Classic at the same time (I recommend this one as well - it lives up to its name).
Shun's knife was significantly sharper and seemed to require no effort to chop through anything. The only 8" Shun chef's knife comparable to the other knives available in store was almost 3x the Wusthof's price, so I didn't try it.
I was happy with the Wusthof, but still felt like it didn't "fit" me. I'm over 6 feet tall, and found that I was having to realign my body to cut the way that chef's did, and that I wasn't actually using most of the handle (using the three finger wrap).
Through an Amazon lightening deal, I came across this beauty for only 50% more than the Wusthof, and figured I'd give it a shot. The way I saw it, one was going back, quite possibly the Shun - unless it proved to be 50% better than the German knife.
The German knife could not have left here fast enough. One cut with the Shun and I knew I had a keeper. The fitted handle is so much more comfortable than the Wusthof. While properly controlling the blade, it is easy to fully grab the handle and have both thumb and index finger fully securing the bolster. The Shun blade is considerably sharper (although I'm sure sharpening by hand could make them comparable, the blade tip angles may play here quite a bit). Storage has proven to be an issue so far, as it doesn't fit in the block that came with the Ever-sharps (the Wusthof did) so it looks like I'll be buying a new one. The knife itself is not only functional, but quite nice to look at as well. The multiple layers of steel are beautiful and the craftsmanship evident in each and every detail.
All in all - I could not be happier - I know I have a "knife for life".
